A sandwich is easy, right?
This is actually the first Diet-To-Go lunch that I am eating at work. I am very thankful that it is a turkey sandwich. The only preparation required was to heat the sandwich up a little bit. (Yes, despite being stored in the fridge, my food is still slightly frozen from shipping.) Then I piled on the mayo with olive oil and the slice of swiss cheese and I was good to go!
It was probably one of the best sandwiches I have ever eaten. The multigrain roll was nice and soft. The turkey was the right temperature – warm but not hot. Even the cheese was perfect. I honestly thought that the bread was going to be soggy and the turkey would be rubbery. It was a very pleasant surprise.
Have I mentioned that I love mushrooms and tomatoes?
I wasn’t sure what to expect from a “tomato and mushroom salad.” Would they be cooked tomatoes? Would they be raw mushrooms? What else would be in it? The salad turned out to be a lovely combination of ingredients. There were pieces of corn, diced tomatoes, cooked mushrooms, and black olives. The salad was so good that I didn’t even notice the black olives until I was almost finished.
The final piece of the meal was a container of applesauce. I found this particularly funny because, without looking at the menu first, I had brought a pouch of cinnamon-flavored applesauce as a snack, just in case. It’s a good thing I didn’t eat my applesauce! The applesauce Diet-To-Go gave me was interesting. There were apple chunks in it but I wouldn’t classify it as “chunky applesauce.” The only disappointing factor was that it was plain applesauce. I prefer mine to be flavored with something, usually cinnamon. But that wasn’t a deal-breaker. It was still tasty.
This was, by far, my favorite meal so far. I know that isn’t saying much since this is only Day 2 but it has renewed my desire to continue the program. I was feeling a little down because my family went out for dessert last night and there’s a party at work today featuring pie and ice cream. If my lunch today was disappointing, I think I would feel more compelled to cheat and eat the bad foods. I’m glad I’m back on track now.
